Well you might pay a visit to Staalplaat (in the Red Light District) for a 
start.  My peak musical experience in Amsterdam came by way of my walkman 
while riding a hired bicycle on the bike roads along the periphery of the 
city.  The "coffeeshops" seemed mainly for tourists, although it was nice 
to hear Sun Electric bubbling out of the speakers in Global Chillage.  For 
musical performances, have a look at the notices at the end of Vital at the 
Staalplaat website, and there is always Time Out Amsterdam as well.
