I have an Audiomedia III on my old G3-upgraded PowerMac (7500) and have been
very, very happy with it. It's not a flashy gimmicky card, but a trustable
workhorse -- two analog ins/outs and digital I/O, and respectable specs. It can
be trusted, which counts for a lot these days.
But perhaps this card isn't available anymore?

The obvious answer would be CSound, and then Max/MSP. And also Supercollider.
AFAIK all these are highly programmable.
Regarding Kyma...it may be on the expensive side, but, as I'm sure you've
noticed, once you learn it you can basically do 'everything' with it. All you
need is Kyma and for example some MIDI trickery ala what Max. Amazing what you
can do with just these two units.
