i've been using waveideas bitstream pro controller for a couple months now:

16 channels, 32 pot dials, 8 sliders, 8 on/off buttons and a lfo that sends
controller data..the components are a little cheap, but a very flexible
controller. i've been using this mostly with reason on a pc and max/msp on
a new ibook.
another fun one is the theremidi palm os based midi theremin:
http://users.ev1.net/~bantha/palm/index.html with $3 in parts and
a little soldering, you have an instant kaoss pad like midi controller
for a palm pilot..
