The obvious: IRCAM - www.ircam.fr.  Kinda a bitch to
get it there, but if you can get someone to show you
around, it's pretty interesting.  Next to the
Pompidou.

GRM - http://www.ina.fr/grm/ - where the first musique
concrete was done.  Cool.

CCMIX - http://www.ccmix.com - outside of Paris at
Mason-Alfortville, this place has the original drawing
boards used by Xenakis.  They have a summer course so
there will definitely be people there.

Cite de la Musique - http://www.cite-musique.fr -
coolest museum I've ever seen.  See old harpsichords,
african instruments, and GRM's first studio setup with
huge sci-fi spherical speakers.  The architecture
rocks as well.
