What your looking to do isn't neccesarily authoring.
What you can prepare is the 5.1 "stems". Which
is easy enough with some software out there.
Nuendo will work stand alone, no extra hardware.
ProTools, some plugins or using the 5.1+ version
of the software, but you need at least mix core
system hardware. Digital Performer 3.0.
You will need a hardware audio interface that
will give you at least 6 different outputs so that
you can monitor your mix. The Motu 828 firewire
box is a good choice.
Once your done you can then lay the stems
down to tape or bounce them down as
seperate AIFF files. Then you need a
software that will encode your 6 channels
of audio into either an AC-3 bit stream
or a DTS stream. The other option is
to ship your stems to a DVD encoding
facility and they can do that for you.
