FM synthesis was on of the first "truely digital" synthesis techniques. It
is simply not possible using analog equipment.
Digital synthesis definitely makes FM more practical but it can be done on
analog synths as well. There is nothing about FM theory that is specific to
digital technology.
As far as birdy sounds I'd agree with the suggestion of manually controlling
an LFO but I think you'd get better results with the LFO modulating the
pitch of an oscillator rather than the frequency cutoff. Try using one sine
oscillator being modulated by a sine LFO and manually control both the LFO
speed and the modulation amount. Then the trick is to play around and learn
to "perform" like a bird would. This of course only works for chirpy/warbly
types of bird songs and not any of the various caws, gobbles, honks or other
bird genres.
