[microsound] Installation hardware advice?

Hi
I'm researching hardware for a sound installation involving basic 
AI/digital entities
which will interact with each other, anyone in the room & the 
environment (esp sunlight)
I was wondering if anyone who has done similar work
could offer advice as to the best platform...
andI guess by best i mean most reliable, as I wont be there at all times
The system has to be in place for a month
The two options I'm currently working on are
1. Kyma remotely on a Mac
2. Max/MSP on a Mac
but any non-PC (sorry micro$oft!) options or advice would be appreciated
as would any directions/links/resouce guides etc for sound installations...
