non realtime: csound, see pvoc anal and resynth (cecilia has a nice front 
end for this)

realtime osx: csound as well, PD more suited.
realtime os9: MAX will do it.

for csound and pd doing it realtime download sources of patches i used for
"i have a dream" (csound) and "odissea" (pd) here:

(sorry, i used csoundav, so win only, but you can hack this to make it run 
on mac)
