I think you could use open source softwares like Cinelerra, Kino, 
Avidemux, i don't remember if there's a windows version but surely you 
can download the sources, for widows you could take a look at Windows 
Movie Maker.
For the high-end video softwares i've seen a lot of Cycling74-Jitter's 
users, someone uses Final Cut Studio, and some other Flash. That's all i 
know about video editing and real-time video performances :)
