If you need a significant amount of control over the sound (i.e.
changing the pitch, attack, etc.) you might use some kind of spectral
modeling software to make an instrument. Basically, you can analyze a
sample of a tamboura and then use software to resynthesize the sound
however you want (higher or lower pitched, faster or slower, and so
forth). You can get some fantastic results this way, though it might
take some work. There's commercial spectral modelling software like this:

which is basically just a nice interface added to something like this:

The latter is built into SuperCollider and Pd. If you're interested I
could send you a quick SuperCollider patch to show you how it works.

software for windows. i'd hate to pay $200 for a digital tamboura box
