An MD walkman and a single stereo microphone do a nice job for a fairly minimal (but not minimalist) capital outlay. Windscreens and rumble filters (both provided with my Audio-Technica stereo condenser mic) do a decent job of reducing some atmospheric interference, and some method of isolating the microphone from the hand(s) holding it might also be considered.
