a lot of interesting questions. hmm...
one thing to think about is, what kind of information do
you want to share between laptops?
that is, what kind of info do you want to receive,
and what do you want it to control?

with your current set-up, you could use Image/Ine
to do audio-diven video processing...
Image/ine will use the amplitude (volume) of an audio signal
coming in the 'sound in' jack to control parameters of video fx
.....or, it will respond to midi data
(you probably know that already)

if you are looking for more customizable control,
the Max/MSP/nato.0+55 combination is really the most powerful.
there are various ways for communicating between machines in Max:
you can send Max/nato messages via TCP/IP with TCPSend + TCPReceive,
or via Ethernet with OSC + otupd. or, the nato 242.wto will even let you
send video signals between machines, live.

does MSP sound worse than (say) Logic Audio?
there's no reason it should, though it's a lot more work
to get something that sounds like a VST synth...

the big issue with Max/MSP/nato.0+55 is that it's
just a toolkit, and it is harder to use (at first) than
off-the-shelf software like ProTools or Logic Audio.
you have to build your own interface before you can do anything.
a bit like the difference between staying in a hotel vs.
building your own house from scratch....
