i did quite a lot research on this topic.
the cheapest way is to build your own sensor system.
there are a lot of embeded processors available that do
their job quite well.
for example:

or
http://handyboard.com/
both can output midi-data.
the oopic is very cheap.

another cheap possibility is to buy a (used) cheap midi-keyboard
and remove the keys and use your sensors as switches instead.
i tried this and it works very well (but only for on/off signals).

a commercial solution is the cube-x:

not cheap a ready to use system that can be equipped with various
sensors also sold by infusionsystems.

there are various other systems like that. if you want to know something specific

there's also my master thesis about interfaces for electronic music. unfortunately

there's a software for pc called EyesWeb that can track movement of a camera image
and convert it to midi (and various different other ways of maniopulating acoustic and visual
data).
