There is a rather good interview with Kim Cascone, I think its someplace on 
the www.cycling74.com site? where Kim talks about a patch he made that will 
randomly pull samples from a folder and play them.

You might also find lloopp to be a useful tool (sometimes the ladies 
consider me a useful tool, heheh :P) its a rather large Max patch you can 
download for free, it can randomly change volume, pitch and length in the 
various loop players. Look for the link to lloopp in the resources section 
of cycling74.com.
