This is no longer true.

Debian is still not very newbie friendly but other distros: Mandrake,
Red Hat and maybe others as well are very easy to install.  They use
graphical installer, auto-detect most hardware, prompt you for a few
settings and you're up and running.  And you reboot only once, when
you're ready to use your new system.  And I just installed an extra
network card in mine and the system auto-detected it and loaded
appropriate drivers.

When you actually have it running there are many GUI tools for
configuring the whole machine.  Witchcraft is no longer required to run
Linux.

Knoppix is a good start, though.  You can play around with it
(optionally, save your settings to the HD so that you don't have to
reconfigure it everytime) and get a hang of it and so, have a smooth
transition from the other system that you happen to be using.  Note
however, that running it off the CD is a little slower than actually
installing it on HD.  A lot of things are compressed on the CD so
there's the unpacking factor when you try to use an app or something.

Knoppix is also excellent to test a computer and see if all HW is
supported.
