Personally I recommend this:

xmms (mp3 player)
glame (filtering)
ardour (HD Recording)
snd (wave editor)
audacity (wave editor)
Pure Data and CSound (audio programming)
arecord (wave recording)
sox (file conversions)

However at http://www.linux-sound.org there's a huge repository of
almost all sound application on linux.
