I throw in the usage of

- webcams together with motiondetection with Max/MSP/Jitter or PD

- supersonic anemometers, very sensible devices from the weather science 
measuring slightest movements of the air, sending signed x,y,z values.

Both I use more for my installations in the white cube context but the 
borders are floating between sound/videoinstallation and music 
instrument. We got the anemometers borrowed by the company for a 
furthcomming exhibiton but there are even some DIY schematics on the 
web. There is a promotional video on the web at
