every sony i've used also has the possibility to set a manual record volume
(although, unlike sharps, you can't change levels during a recording). i
haven't used many recent models, though. automatic level control is pretty
useless for field recording, for exactly this reason, so look through your
manual if you don't know how to set a manual level, or tell us what model
you have, someone will know...

sony minidiscs use automatic level control, which i suspect is why you're
getting the hiss (if they occur during periods of low-level noise or
quasi-silence)...i use a sharp (which allows you to set your own levels) for
this reason.
