This uility allows you to turn Search on and off:

Also if you delete all your widgets, or just remove them all from the dashboard, it will effectively disable the dashboard also.

Regarding comments about things "panning out" after the initial indexing:
that was fine, I waited for it, but it seemed to index within five mins
after finishing, and it kept doing this for a couple days on and off... It
would take several hours to index and then stop and I could use spotlight
and within 5 mins, it would be indexing again.

As per my system specs:
G4 1ghz
768MB RAM
Imac 17" system. 80gb hd (not sure the speed, I'd assume whatever the faster
standard is).
