There's a cheap program called Numerology made by a small company
called Five 12, which has modules suited to this kind of thing. I use
it as a handy way for abusing cheap MIDI hardware via NRPN programming.
It's quite an incredible tool for jamming as well:

You can ask questions on their mailing list and get help from the
developers, it's a friendly little scene.
Also, Logic has something geared for programming drum patterns. You
open up a section of MIDI data in the Hyperedit window, then switch to
GM drums. Here's a screenshot if you're not familiar with this:

With Logic 7.1, you can bounce down your programmed drum loops as audio
files, and turn them into Apple Loops (or Recycle loops if you have
Recycle), which can be a nice way of working.
